Talking about Puerto Rico is thinking of its paradisiacal beaches and taking a moment to relax. But, its delicious cuisine is also something to consider because, in addition to being tasty, it can be very healthy.

El Mofongo is a dish of unknown origin that shares the typical rich flavor with Dominicans and Cubans, but it is in Puerto Rico where the deliciousness of this recipe has become incredibly popular. It is a mix of mashed green plantains that contains amazing benefits such as the ability to moderate blood sugar levels after meals, reduce appetite, and is high in fiber.

To start, peel the plantains and then cut them into thick slices, soaking them in water with a little salt for 15 minutes. Once done, remove excess moisture and fry them. The original dish contains pork cracklings, but since this will be a healthier version, this ingredient will be omitted.

After frying the plantains, making sure they are not too golden for easier mashing, place them in a food processor or mash them by hand as preferred. To this resulting paste, add cilantro and some sautéed scallions, mixing until smooth, and set aside.

In a bowl, season shrimp and some calamari to taste. Fry until golden and remove. If desired, you can prepare a garlic-infused dressing to accompany. Now, take the plantain mixture and form a layer in the hand with a scoop, place the seafood on top, close slightly, and serve on a plate with the layer of plantain facing up, forming a volcano. Then, drizzle with garlic sauce or a little broth and enjoy. This delicious recipe contains only 198 kcal and is incredibly divine.
