Alcapurrias

Alcapurrias are prepared with plantain or yuca dough, filled before frying, creating a delicious bite full of flavor. It is a typical Puerto Rican dish, perfect as a side or a tasty, satisfying snack.

To prepare alcapurrias, the ingredients are mixed in a blender until a smooth dough is achieved.

Then, a portion of this dough is placed on aluminum foil, filled, and carefully sealed.

The preparation is fried in hot oil until golden, and served drained.

Ingredients

1 Green plantain

2 Ripe plantains

1 teaspoon of Achiote

1 teaspoon of Oil

½ teaspoon of Salt

½ teaspoon of Vinegar

Preparation

Step 1 : In a blender, place all the peeled and chopped ingredients of the dough, then blend until they reach a dough-like consistency.

Step 2 : Next, cut a sheet of aluminum foil approximately the size of a sheet of paper and grease it with a bit of oil.

Step 3 : Place a ball of dough in the center of the sheet and flatten it with your hands until forming a thin patty.

Step 4 : Add a small amount of filling in the center and fold the sheet to close, pressing the surface and sides to ensure a proper seal, similar to a rectangular empanadilla.

Step 5 : Then, remove the aluminum foil and shape the alcapurria with oiled hands.

Step 6 : Next, carefully place it directly into a pot with hot oil and fry on all sides until it reaches an attractive golden color.

Step 7 : Finally, remove from the oil and let drain on absorbent paper before serving, according to each person's taste.
