Corn Empanadillas
Ingredients
½ kilogram of Ground meat
1 Seasoning packet
3 tablespoons of Tomato sauce
Oregano
Sofrito
4 cups of Cornmeal flour
4 cups of Water
2 tablespoons of Oil
2 teaspoons of Salt
Aluminum foil
1 pinch of Salt
Achiote lard
Frying oil
Preparation
Step 1 : To prepare the empanadillas, start by shredding the meat and rinsing it with water to soften it.
Step 2 : Then add the tomato sauce, seasonings, salt, oregano, and sofrito, cooking over moderate heat until the meat is well cooked and its juices have reduced.
Step 3 : In a separate pot, place water, oil, and a teaspoon of salt over heat.
Step 4 : In a separate bowl, pour in the cornmeal flour.
Step 5 : When the water with oil boils, slowly add it to the cornmeal flour, mixing to form the dough.
Step 6 : Gradually add water until the dough is firm and pulls away from the sides of the container.
Step 7 : Cut aluminum foil into squares of the desired size for the empanadillas and spread achiote on the paper to prevent sticking.
Step 8 : On the work surface, arrange the necessary materials: ground meat, cornmeal flour, achiote, aluminum foil, and spoons.
Step 9 : To form medium-sized empanadillas, make a ball about the size of your palm and create a hollow in the center with your fingers.
Step 10 : Fill the hollow with the seasoned ground meat and close the empanadilla by pressing the edges.
Step 11 : Place on the aluminum foil and shape by pressing the edges.
Step 12 : If desired, refrigerate to let the filling set before frying.
Step 13 : Heat the oil and fry the empanadillas, without moving them, until golden on one side, then turn and fry the other side.
Step 14 : Place on absorbent paper before serving hot or letting cool slightly.
