Cornmeal and Meat Empanada from Puerto Rico
Ingredients
2 cups of Flour
5 cups of Hot water
3 teaspoons of Salt
1 pinch of Yellow coloring
1 Onion
2 Garlic
1 Red bell pepper
1 Chicken broth cube
1 cup of Wine
Preparation
Step 1 : To prepare the empanadas, start by heating the water with salt and yellow coloring, avoiding boiling.
Step 2 : Then add the flour and mix thoroughly, allowing the dough to rest for a few minutes.
Step 3 : After resting, work the dough and form medium-sized balls, which are set aside while preparing the filling.
Step 4 : For the filling, chop the onion, garlic, and pepper into small pieces, and sauté in a saucepan with 3 tablespoons of olive oil.
Step 5 : Add the chopped meat, stirring occasionally to prevent sticking, season with salt, add half of the chicken broth cube, and pour in the wine.
Step 6 : Cover and cook until all the liquid has evaporated.
Step 7 : Sprinkle some wheat flour on plastic wrap and take a ball of cornmeal dough.
Step 8 : Gently flatten the ball with your palms and place it on the paper.
Step 9 : Using a rolling pin, gently roll out the dough to prevent tearing.
Step 10 : Outline a circle using a plate.
Step 11 : Place the preferred filling, such as seasoned meat, in the center of each dough circle.
Step 12 : Carefully join the edges and close by gently pressing them together.
Step 13 : Repeat this step with all remaining empanadas.
Step 14 : Finally, fry the empanadas in abundant oil.
