Ingredients

400 grams of Desalted salt cod

1 cup of Fresh parsley

200 grams of Wheat flour

2 Garlic cloves

3 Eggs

150 grams of Butter

300 milliliters of Water

1 teaspoon of Baking powder

500 milliliters of Olive oil

1 teaspoon of Salt

Preparation

Step 1 : To prepare the salt cod fritters, start by boiling the salt cod, cook it, remove the skin and bones, and then shred it.

Step 2 : In a saucepan over medium heat, place the water and butter.

Step 3 : When it starts to boil, remove from heat and add the sifted flour with the baking powder all at once.

Step 4 : Return to the heat and stir with a wooden spoon until a smooth, lump-free dough forms that pulls away from the sides.

Step 5 : Remove the saucepan from heat and let it cool slightly.

Step 6 : Incorporate the eggs one at a time, stirring well after each addition.

Step 7 : The resulting dough should be thick, glossy, and creamy.

Step 8 : Shred the salt cod, finely chop the parsley and garlic, and add them to the dough.

Step 9 : Mix well and refrigerate for at least one hour.

Step 10 : After that time, heat enough oil in a pan and, using two teaspoons, form the fritters and fry them slowly.

Step 11 : When removing them from the oil, place on a plate lined with paper towels to absorb excess oil.

Step 12 : Serve the fritters hot.
