2 cups of Cornmeal

Step 1 : Place water, salt, and sugar in a saucepan and bring to a boil.

Step 2 : Taste and adjust the seasoning as desired before proceeding.

Step 3 : Then, add the cornmeal gradually to prevent lumps, reducing the heat to cook slowly.

Step 4 : If necessary, add more cornmeal, stirring quickly.

Step 5 : Incorporate the butter and all-purpose flour, then let the mixture rest in the refrigerator for half an hour to set.

Step 6 : The resulting dough should not be sticky.

Step 7 : To prepare the sorullitos, lightly moisten your hands.

Step 8 : Take a portion of dough, form a hollow in the center, and place a piece of cheese inside.

Step 9 : Then, close the dough around the cheese to form the sorullo.

Step 10 : It is advisable to prepare them in advance and fry the next day to enhance flavor.

Step 11 : Fry the sorullitos in abundant hot oil, ensuring they are well golden on both sides.

Step 12 : Once done, remove them from the oil and place on paper towels to drain excess fat.
