Yuca with Mojo and Vinegar
Ingredients
5 pounds of Yuca cut
2 liters of Water
1 Onion in rings
5 Chopped garlic cloves
1 cup of Corn oil
⅓ cup of White vinegar
2 Bay leaves
Juice of one lime
1 tablespoon of Adobo seasoning
1 teaspoon of Salt
1 pinch of Pepper
Preparation
Step 1 : The yuca is boiled in a pot with ample water and salt for 20 to 30 minutes until well cooked.
Step 2 : Meanwhile, in a skillet over medium heat, heat the oil and add vinegar, onion, garlic, bay leaves, lime juice, adobo, and pepper.
Step 3 : Let it cook for 10-15 minutes, until the onion is tender to taste.
Step 4 : Once the yuca is cooked, place it on a serving plate and remove the fibers from the center of the pieces.
Step 5 : You can do this step once the yuca has cooled slightly.
Step 6 : Next, add the mojo over the cooked yuca.
Step 7 : It can be served hot, at room temperature, or after chilling in the fridge for a while.
