Spiced Fermented Mavi
Ingredients
20 grams of Mavi bark
1 liter of Cured or pie Mavi
3 liters of Water
250 grams of Brown sugar
500 grams of White sugar
10 grams of Ginger
10 grams of Cinnamon
Preparation
Step 1 : In a pot, heat 2 liters of water until boiling.
Step 2 : Add the Mavi bark and let it boil for at least 15 minutes.
Step 3 : Then, let it rest until it reaches room temperature.
Step 4 : While the tea boils, in another container, mix 1 liter of water with the white sugar and brown sugar.
Step 5 : Once the tea has reached room temperature, strain it and mix with the sweetened water.
Step 6 : Add the Mavi pie (mavi stem) and stir well to dissolve the sugar.
Step 7 : As it mixes, foam will start to form on the surface, which aids in the fermentation process.
Step 8 : Then, transfer to glass containers with a cloth cover to prevent explosions during fermentation.
Step 9 : Allow it to ferment in sunlight for 36-48 hours.
Step 10 : Once fermented, store in a shaded place.
Step 11 : Later, keep it in the refrigerator or serve with ice.
Step 12 : It can also be enjoyed hot by adding spices like ginger and cinnamon.
