Thyme and Vanilla Blackberry Lemonade

Ingredients

1 cup of Water

1 cup of Sugar or stevia

1 Bowl of blackberries

2 teaspoons of Pure vanilla extract

10 Thyme sprigs

3 cups of Fresh lemon juice

5 cups of Water

Preparation

Step 1 : In a small pot, combine one cup of water with one cup of sugar or stevia, stirring until well mixed.

Step 2 : Then add the blackberries and 8-10 sprigs of thyme to the pot and heat over medium-high heat until boiling.

Step 3 : Reduce the heat and cook for 5 minutes or until the blackberries are pale and tender.

Step 4 : Use the back of a spoon to mash the blackberries.

Step 5 : Turn off the heat and let it rest until it cools.

Step 6 : Meanwhile, squeeze three cups of lemon juice from the lemons.

Step 7 : Pour the juice through a fine mesh strainer into a large pitcher, then add 5 cups of cold water and vanilla extract.

Step 8 : Using the strainer, strain the blackberry syrup into the pitcher, pressing to extract all the juices.

Step 9 : Mix everything until well combined and decorate with lemon slices, whole blackberries, and sprigs of thyme.

Step 10 : Refrigerate to chill and serve over ice.
