Green Plantains and Sweetbreads

Green Plantains and Sweetbreads

Ingredients

1 kilogram of Sweetbreads

8 Green plantains

½ White onion

½ Red bell pepper

½ Green bell pepper

½ Yellow bell pepper

½ Orange bell pepper

10 Green olives

½ cup of Olive oil

½ cup of White vinegar

½ cup of Water

Black pepper

1 pinch of Salt

Bay leaf

2 Garlic cloves

2 teaspoons of Parsley flakes

1 Powdered onion

Preparation

Step 1 : The green plantains are peeled and cut into one-inch pieces.

Step 2 : Then, they are boiled in a pot with water and salt for 10-12 minutes until tender.

Step 3 : Meanwhile, the sweetbreads are cut into small pieces and boiled in another pot with water for ten minutes.

Step 4 : Once cooked, the plantains are drained and placed in a large container, drizzled with a little olive oil to keep their freshness.

Step 5 : Separately, in a pot with hot oil over medium-high heat, add the remaining ingredients and bring to a boil.

Step 6 : Then, reduce the heat and cook until the onions and peppers are soft, about 7-10 minutes.

Step 7 : Taste and adjust the seasonings as needed.

Step 8 : Next, pour the vegetable mixture over the plantains in the large bowl, mixing well to coat them.

Step 9 : Add the sweetbreads, mix everything, and refrigerate for at least one hour before serving.
