Ingredients

4 Ripe plantains

Parchment paper

1 Chopped onion

1 Chopped garlic

Olive oil

½ Chopped green bell pepper

3 tablespoons of Chopped green olives

1 teaspoon of Achiote

teaspoon of Cumin

1 tablespoon of Tomato paste

360 grams of Ground beef

1 teaspoon of Thyme

140 grams of Mozzarella cheese slices

4 Eggs

Black pepper

1 pinch of Salt

Preparation

Step 1 : The plantains are peeled and cut in half, then placed on a baking sheet with parchment paper and baked for about 30 minutes.

Step 2 : After that time, they are removed and crushed with a plate or flat tool, then returned to the oven for another 10 minutes.

Step 3 : Once ready, they are removed and set aside.

Step 4 : To prepare the sofrito, sauté the onion and garlic in a little oil, then add the green pepper, olives, and thyme.

Step 5 : After a few minutes, add the achiote, cumin, tomato paste, and seasoned meat with salt and black pepper.

Step 6 : Cook for about 15 minutes and set aside.

Step 7 : In a dish lined with parchment paper, beat two eggs with salt and pepper to form a base layer.

Step 8 : Then, add layers of plantains, prepared meat, mozzarella slices, repeating the process.

Step 9 : Pour the remaining beaten eggs over the cheese and finish with slices of plantain.

Step 10 : Place the dish in a preheated oven at 180°C and bake for 45 minutes.

Step 11 : It's important to let it cool slightly before serving, and it is recommended to accompany this delicious dish with a salad of your choice.
