Plantain Mofongo

Mofongo is an iconic dish from Puerto Rican cuisine, made with ripe fried plantains, garlic, and pork cracklings. Its preparation is simple but requires dedication to mash the plantains to achieve the desired texture before shaping into balls. A delicious dish full of traditional flavors.

The plantain is peeled and sliced.

Soak the slices in water with salt, drain, and dry them before frying in hot oil.

Cooked and mashed with garlic and pork cracklings, the mixture is shaped and served with chicken or meat broth.

Plantain Mofongo

Ingredients

4 Green plantains

1 pound of Pork cracklings

3 Crushed garlic cloves

4 teaspoons of Olive oil

2 cups of Oil for frying

Preparation

Step 1 : The plantains are peeled and cut into 1½-inch thick slices.

Step 2 : Then, they are soaked in salted water for 15 minutes, drained and dried before frying in a hot skillet with oil.

Step 3 : They are cooked for about 12 minutes over medium-low heat until they turn a light golden color, turning them halfway through to ensure even cooking and prevent over-browning.

Step 4 : You can check doneness by piercing them with a fork.

Step 5 : Once cooked, remove them and mash in a pilón (mortar) in batches, adding a bit of crushed garlic and pieces of pork cracklings.

Step 6 : With the mixture ready, shape it into half-spheres using your hands or a container.

Step 7 : Finally, serve hot with chicken broth or your preferred meat.
