Ingredients

1 Pork loin

2 teaspoons of Kosher salt

½ teaspoon of Pepper

2 tablespoons of Oregano

4 Garlic cloves, minced

2 tablespoons of Olive oil

1 Onion, chopped

¼ cup of Water

2 tablespoons of White vinegar

¼ cup of Recaíto

1 Small onion, diced

¼ cup of Roasted red peppers or diced spicy peppers

1 tablespoon of Capers

1 Sazón with achiote

1 tablespoon of Tomato paste

2 cups of Cooked rice

400 milliliters of Gandules (pigeon peas), drained

2 cups of Water

2 Bay leaves

2 Ripe plantains

Vegetable oil

3 Eggs

Cilantro

Avocado

Preparation

Step 1 : To prepare this delicious recipe, start by combining salt, pepper, oregano, garlic, and olive oil in a small bowl.

Step 2 : Then, rub the pork loin with this seasoning mixture.

Step 3 : In a slow cooker, add the chopped onion and place the pork on top, adding water and vinegar.

Step 4 : Cook on high for 3 hours.

Step 5 : While the pork cooks, you can prepare the rice.

Step 6 : In a hot pot with olive oil over medium-high heat, add recaíto, onion, red peppers, and capers.

Step 7 : Cook until the onion is translucent, then add sazón, salt, and tomato paste, mixing well.

Step 8 : Add the rice and toast for a few minutes before adding water, gandules, and bay leaves.

Step 9 : Let it boil, then reduce the heat and cover for 20-30 minutes until the rice is tender.

Step 10 : Meanwhile, peel and diagonally cut the plantains, fry them in a skillet until golden.

Step 11 : Once ready, remove and set aside.

Step 12 : In a separate skillet, scramble the eggs.

Step 13 : Heat olive oil in another skillet over high heat and add the pork, fried plantains, half of the cooked rice, and scrambled eggs.

Step 14 : Stir-fry until everything is hot and the rice is crispy.
