Ingredients

¼ cup of Corn oil

1 Finely chopped green pepper

1 Finely chopped red pepper

½ cup of Finely chopped yellow onion

4 Cloves of garlic, chopped

2 tablespoons of Chopped cilantro

2 Oregano sprigs

1 cup of Seafood broth

3 tablespoons of Tomato paste

¼ cup of Sliced green olives

700 grams of Raw jumbo shrimp

1 Finely chopped cooked potato

1 pinch of Salt

Preparation

Step 1 : To begin, heat the oil over medium-high heat in a large skillet.

Step 2 : Next, sauté the peppers and onions in the hot oil until they soften, which will take about 5 to 6 minutes.

Step 3 : Then, add garlic, cilantro, and oregano to the mixture and cook for 30 seconds to let the flavors meld.

Step 4 : Subsequently, pour the seafood broth into the skillet and bring it to a gentle boil.

Step 5 : Then, add the tomato paste to the preparation and mix well with the other ingredients.

Step 6 : Next, add the shrimp to the skillet and cook until they turn pink, approximately 5 to 7 minutes.

Step 7 : Once the shrimp are ready, add the potatoes to the mixture and taste for seasoning, adjusting if necessary.

Step 8 : Let the potatoes warm for a few minutes.

Step 9 : Finally, once the potatoes are heated, the dish is ready to be served and enjoyed.
