Coconut and Vanilla Berry Pudding
Ingredients
1 Vanilla bean
2 tablespoons of Sugar
300 grams of Mixed berries
400 milliliters of Coconut milk
400 milliliters of Sweetened condensed milk
½ cup of Whole milk
1 teaspoon of Coconut extract
½ cup of Cornstarch

Preparation
Step 1 : Start by cutting the vanilla bean in half lengthwise and scraping out the caviar.
Step 2 : In a small bowl, combine the vanilla bean caviar and sugar, mixing them with your fingers.
Step 3 : Mix the berries with this vanilla sugar mixture and set aside.
Step 4 : If using vanilla extract, add the sugar, vanilla, and berries into a bowl and mix.
Step 5 : In a saucepan, combine the coconut milk, whole milk, coconut extract, and sweetened condensed milk, whisking until well combined.
Step 6 : Then, pour one cup of this milk mixture into a small bowl.
Step 7 : Add the cornstarch to the separated milk mixture and whisk until thoroughly mixed.
