Tembleque (coconut pudding)
Ingredients
4 cups of Coconut milk
½ cup of Cornstarch
1 cup of Sugar
½ teaspoon of Salt
1 tablespoon of Grand Marnier
Ground cinnamon
Preparation
Step 1 : To prepare the dessert, lightly grease six 4-ounce ramekins and set aside.
Step 2 : In a medium saucepan, combine all ingredients except the cinnamon and whisk until well blended.
Step 3 : Then, place the mixture over medium-high heat and cook, stirring constantly, until it just begins to boil and becomes smooth and thick, about 5 minutes.
Step 4 : Once ready, pour the pudding into the prepared molds, cover with plastic wrap, and refrigerate until firm, at least 3 hours or overnight.
Step 5 : To serve, you can enjoy directly in the molds or, if you prefer to unmold, run a thin knife around the edge and invert the mold onto the serving plate.
