Shrimp and Pepper Asopao

Ingredients

1 pound of Shrimp

1 cup of White onion

2 tablespoons of Sofrito

½ Green bell pepper

½ Red bell pepper

1 Seasoning with cilantro and achiote

¼ cup of Tomato sauce

2 tablespoons of Canola oil

3 Fresh garlic heads

1 cup of Rice

1 pinch of Salt

1 pinch of Pepper

8 cups of Water

Preparation

Step 1 : In a pot, sauté a bit of onion, peppers, and fresh garlic until they are soft.

Step 2 : Then add the shrimp tails and cook until they change color.

Step 3 : Next, add 4 cups of water, let it cook for about 5 minutes, and strain the broth, reserving it.

Step 4 : In the same pot, add the remaining ingredients: onion, green and red peppers, fresh garlic, and sautéed mixture, cooking until tender.

Step 5 : Then, add the tomato sauce and shrimp.

Step 6 : After 2 minutes, remove half of the shrimp and keep the rest in the pot.

Step 7 : Add the previously prepared broth (4 cups of water), bring to a boil, and add another 4 cups of water, the seasoning packet, and the rice.

Step 8 : Cook over medium heat for about 25 minutes.

Step 9 : Then, add back the other half of the shrimp and cook for an additional 10 minutes.

Step 10 : Once ready, the shrimp and pepper asopao is ready to be enjoyed.
