½ Chopped large onion and

¼ Chopped red pepper

¼ cup of Homemade sofrito

500 grams of Shrimp tails removed and set aside

4 Chopped garlic cloves

1 tablespoon of Salt

Some cilantro sprigs

2 Thyme sprigs

10 cups of Water

1 ½ tablespoon of Olive oil

¾ Chopped red pepper

½ Finely chopped onion

1 teaspoon of Oregano

1 Sazon packet

½ teaspoon of Cumin

120 grams of Tomato sauce

½ cup of Sofrito

2 tablespoons of Olive oil

¼ pound of Chopped cilantro

2 Chopped garlic cloves

1 cup of Rinsed long-grain rice

1 pound of Raw shrimp

2 Chopped garlic cloves

Preparation

Step 1 : In a large pot over medium-high heat, warm the oil and add the onions and peppers, cooking until they soften.

Step 2 : Next, add the sofrito, shrimp tails, garlic, salt, cilantro, and tomato, sautéing for a few minutes.

Step 3 : Then, pour in water and cook over low heat for 10-15 minutes.

Step 4 : Once ready, turn off the heat and let the shrimp broth cool down, then strain it into a large container.

Step 5 : In the same pot with hot oil, prepare the sofrito sauce by adding onions, peppers, garlic, and sofrito, cooking until fragrant.

Step 6 : Then, season with salt, pepper, oregano, sazon, and cumin.

Step 7 : Add the tomato sauce and a quarter cup of raw shrimp, reserving the rest.

Step 8 : Let it infuse for a few seconds before adding the shrimp broth.

Step 9 : Next, cook the rice, stirring occasionally, until tender.

Step 10 : Add the remaining raw shrimp and chopped cilantro, cooking a few more minutes until well cooked.

Step 11 : Finally, serve the dish.
