Tortellini Soup with Parsley

Ingredients

3 tablespoons of Olive oil

400 grams of Cheese tortellini

1 Chicken pieces

1 Chopped onion

1 Garlic head

2 Chopped celery stalks

2 Chopped carrots

1 Thyme bundle

1 Parmesan cheese rind

1 cup of Grated Parmesan cheese

Preparation

Step 1 : In a large pot, heat the olive oil over high heat.

Step 2 : Add the vegetables and sauté, then add the chicken and let it brown.

Step 3 : Next, add four liters of water and the Parmesan cheese rind.

Step 4 : Reduce the heat to the first boil and remove any foam that forms.

Step 5 : Let the broth simmer for three hours over low heat, then strain it and reheat with the thyme.

Step 6 : Add the tortellini to the broth and heat until cooked.

Step 7 : Finally, serve the soup sprinkled with a little Parmesan and pepper.
